Zucchini
Bread
| 2/3 c. shortening
2 2/3 c. sugar 3 cups shredded zucchini 2/3 c. water 3 1/3 c. flour 2 tsp. baking soda |
1 1/2 tsp. salt
1/2 tsp. baking powder 1 tsp. cinnamon 1 tsp. nutmeg 1/2 tsp. ginger 2 tsp. vanilla |
| Mix sugar and shortening in a large bowl. Add eggs, zucchini and water. Blend in the rest of the ingredients. Pour into three greased loaf pans (8 1/2 x 4 1/2 inches). Bake for about 1 hour 10 minutes at 350o. Cool completely before cutting. |
