Rolls
| ½ cup sugar
2 teaspoons salt 3 tablespoons shortening 1½ cups hot water 2 packages yeast ½ cup lukewarm water 2 eggs 7 cups sifted flour Put sugar, salt and shortening in large mixing bowl and add 1½ cups hot water. Set aside to cool to lukewarm. Dissolve yeast in the ½ cup lukewarm water. As soon as first mixture has cooled to lukewarm, add beaten eggs and yeast mixture. Stir ½ cup of the flour, beating,
with a rotary beater in small additions of flour until it is too thick
to beat, then mix in remaining flour with a spoon. Place the mixture in
the refrigerator overnight, or for a few hours. -
When read y to use, take from refrigerator, knead thoroughly on a floured board (working in more flour if necessary to handle easily) and form into rolls. Allow to double in bulk, then bake in hot oven (425° F.) for 10 to 15 minutes. Shape Variations CLOVERLEAF ROLLS: Cut off three small bits of dough, shape into round balls and place in greased muffin tins, turning to grease the top. PARKER HOUSE: Roll the dough out thin and cut with a biscuit cutter. Brush top lightly with butter, crease slightly off center with the dull edge of a knife; fold larger part over the other and press edges. FAN-TANS: Roll dough out to about 1/8 inch thickness. Butter and cut into one-inch strips. Place six or seven of these strips on top of each other and cut into 1½ inch sections. Place sections in greased muffin tins with a long edge down. CRESCENTS: Roll dough into a circle about 14 inches in diameter and ¼ inch thick. Cut into a dozen pie-shaped pieces. Brush lightly with melted butter, then roll each wedge up, starting at the wide end. Curve the rolls slightly to form crescents and place on baking sheet in that position. CINNAMON ROLLS: Roll dough to ¼ inch thickness. Spread with butter, sugar and cinnamon. Add chopped nuts or raisins if desired. Roll the dough and cut in slices about an inch thick. Place close together in greased baking dish, allow to raise until double in bulk and bake in moderate oven (350 to 375° F.). |
