Mountain Strawberry Pie
| 1 quart strawberries
1 cup sugar 3 tablespoons water 1 tablespoon corn syrup 1 egg white ¼ teaspoon vanilla Baked pie shell Wash and stem strawberries and place in
baked pie shell. Combine sugar, water, syrup and egg white in a double
boiler. Cook over boiling water about 7 minutes, beating constantly with
a rotary beater. Remove from stove and add vanilla. Continue beating until
the consistency of cake icing. Pour over berries in baked pie shell, piling
it in swirls over the top. Allow it to cool before serving. A soft crust
will form over the top.
