Open Face Veggie Sandwiches
 
2 jars roasted red peppers 
1 red onion, sliced 
1 large beefsteak tomato, sliced 
½ lb. thinly sliced Swiss cheese 
1 cup mayonnaise 
2 T pesto sauce* 
4 large sub rolls 

Drain jars of peppers and blot dry. Slice rolls on one side to make an open-faced sandwich form. Mix mayonnaise and pesto sauce together. Spread mixture liberally inside rolls. Place a layer of red peppers on top, then layer with red tomato, another layer of red onion, and top with thin slices of cheese. Place sandwiches, open faced, on a cookie sheet. Place under broiler until cheese is golden and bubbly. 

Note: I would use purchased pesto sauce, unless I was planning to make some anyway.
