Turkey Tetrazzini
 
12 oz. mushrooms, sliced
¾ c plus 2 T butter
½ c all purpose flour
4 c chicken broth
3 c milk
½ c dry sherry
1 2/3 c Parmesan cheese, grated
4 c cubed cooked turkey
1½ c soft bread crumbs
1 - 16 oz. package spaghetti, cooked

Sauté mushrooms in ¼ c of the butter; stir into pasta. Melt ½ c of the butter; stir in flour. Stir in broth, milk and sherry. Cook and stir until boiling. Add 1 1/3 cups of the cheese. Set aside 2 cups sauce. Mix pasta mixture, turkey and remaining sauce in greased casserole. Pour on reserved sauce. Melt remaining butter; mix with bread crumbs and remaining cheese. Sprinkle on top. Bake at 350° F. for 1 hour.
