Tomato Curry Sauce
 
 
1 (8 ounce) can tomato sauce
1 c water
1 medium-sized onion, chopped
1 tart cooking apple, chopped
1½ tablespoon curry powder
1 bay leaf, crushed 
2 tablespoons butter or margarine
1 clove garlic, minced
2 teaspoons salt
½ teaspoon ginger

Turn tomato into saucepan, add water to sauce. Add onion, apple, bay leaf, butter, and ginger. Add salt to minced garlic (right on cutting board). Rub together with flat side of spatula until garlic is rubbed to a paste with the salt. Add to sauce. Add 1 tablespoon curry powder, saving additional to add at end if heavier seasoning is desired. Simmer gently 20 to 25 minutes.
