Sweet Potato Puff
 
 
2 cups mashed sweet potatoes
2 tablespoons butter
1 teaspoon salt
½ cup whole milk or half and half
2 eggs, separated

To mash potatoes, boil whole fresh potatoes until tender. When tender, remove the skins and mash or put through a potato ricer. Add the butter, salt and milk and mix well. Add beaten egg yolks, then carefully fold in beaten egg whites. Pile lightly into a greased baking dish and bake in a 350° F. degrees for 45 minutes, or until golden brown.
