Potato Croquettes
| 4 cups hot mashed sweet potatoes
1/3 cup hot milk 4 tablespoons butter 1 teaspoon salt 1 egg, slightly beaten 1 cup buttered bread crumbs Mix milk, salt and butter with hot mashed potatoes. Dip slightly beaten egg and then crumbs. Bake 30 minutes in moderate oven (375° F.) or until brown. (For buttered bread crumbs, melt 2T butter
and mix in 1 cup dried bread crumbs.)
