Sweet Potato Casserole
 
3 pounds sweet potatoes
½ c butter or margarine
½ c firmly packed, brown sugar
¼ c sugar
2 t vanilla extract
½ t ground cinnamon
½ t ground nutmeg
marshmallows

Scrub sweet potatoes and cook in boiling water covered for 40 to 50 minutes, or until fork-tender. Drain and rinse under cold water to stop cooking process; drain on paper towels. Peel when cool enough to handle; mash with butter. Beat in next 5 ingredients with an electric mixer.

Spread in shallow greased 1½ quart baking dish and bake in a preheated 350° F. oven for 20 minutes. Cover with marshmallows; bake 10 to 15 additional minutes or until marshmallows are melted and lightly browned. 6 to 8 servings
