Individual Swiss Steaks
 
 
6 individual round or chuck steaks (1" thick)
Flour
Salt
Pepper
Bacon drippings or shortening 
1 onion
2 c. tomatoes

Pour flour on steaks and season with salt and pepper. Brown oil both sides in bacon drippings or shortening. Place a slice of onion on each steak and add tomatoes. Cover tightly and cook in a slow oven (300° F.) for about 3 hours, or until tender.
