Strawberry Parfait Pie
 
Cookie Crust
2/3 stick butter, softened
¼ cup powdered sugar
½ teaspoon vanilla
1 cup flour
1/8 teaspoon salt

Strawberry Filling
1 cup hot water
1 – 3 ounce package strawberry gelatin
1 – 10 ounce package frozen strawberries
1 pint vanilla ice cream

In a bowl, combine the butter, sugar and vanilla. Add flour and salt. Mix well and press into a 9 or 10 inch pie plate. Using a fork, poke holes into the crust all around. Bake for 10-12 minutes at 400° F. or until lightly browned. Cool.

In a large saucepan, heat water to almost boiling. Stir in gelatin. Add frozen berries and stir until strawberries are separated. Add ice cream and continue to stir until ice cream is well blended. Spoon into cooled pie shell. Cover and chill in refrigerator until set. Serve with whipped cream.
