Strawberry
Cream Pie
| Fresh strawberries (enough to fill pie
shell)
1¼ cups sugar ½ cup flour 2 eggs 2 cups milk 2 tablespoons butter Baked pastry shell Fill pie shell with washed, drained berries.
Mix sugar and flour and add milk. Cook in double boiler over hot water
until smooth and thick, stirring constantly. Pour small amount of mixture
over beaten egg yolks, stir well then add to cooked mixture. Stir and cook
a few minutes. Add butter. Pour cooked mixture over berries and top with
meringue made by beating 4 tablespoons sugar into beaten egg whites, adding
sugar very gradually. Spread meringue on top of pie and bake at 350°
F., until brown, about 15 minutes.
