| Rib, club, porterhouse or sirloin steak
Salt and pepper Blue cheese French dressing Worcestershire sauce Have steak cut from 1 to 1½ inches thick. Place on broiler so that top of meat is from 3 to 3½ inches from source of heat. Broil until nicely browned on one side, allowing about 10 minutes of total cooking for rare, 14 minutes for medium, and 20 minutes for well done meat. In the meantime, mash blue cheese with a fork, allowing about ½ ounce for each serving. Add a little French dressing, drop by drop, until cheese is soft and of good spreading consistency. Season with a few drops of Worcestershire sauce and blend. When steak is almost done, season with salt and pepper and spread cheese mixture over top. Heat in broiler until the mixture bubbles; serve at once. |
