Sour Cream Peach Pie
 
 
2 cups fresh peaches, chopped fine 
2 tablespoons flour 
½ teaspoon vanilla 
1 cup sour cream 
¾ cup sugar 
1 egg
1/8 teaspoon salt
Unbaked pastry shell

Sift dry ingredients together. Add egg, sour cream and vanilla and beat until smooth. Add peaches and mix well. Pour into unbaked pastry shell. Bake at 450° F., for 10 minutes, then reduce heat to 350° F., and continue baking another 30 minutes.
If topping is desired, mix 1/3 cup sugar, 1/3 cup flour, 1 teaspoon cinnamon, ¼ cup butter; sprinkle over pie for last fifteen minutes of baking.
