Squash
Pie
| 1½ cups mashed squash
2 eggs, separated 1 cup milk 2/3 cup brown sugar 1 tablespoon butter ¾ teaspoon cinnamon ½ teaspoon ginger ¾ teaspoon salt ½ cup nuts, if desired Pastry for single-crust pie Mix sugar and spices. Add squash and milk,
then beaten egg yolks and melted butter. Beat egg whites until almost stiff
and fold into mixture. Pour into unbaked pie shell and bake at 450°
F. for 10 minutes to set the crust, then reduce heat to 350° F. and
bake 30 minutes longer.
