Squash Casserole
 
 
1 to 1½ lb. yellow squash
½ stick margarine
1 medium onion, chopped
1 c. chopped ham
¼ c. milk
12 saltine crackers, crushed
salt and pepper to taste
2 c. cheddar cheese, shredded

Slice yellow squash and steam or boil until done. Drain well, then mash with a fork. In a skillet, melt and sauté chopped onions until soft and a golden brown color (about 5-10 minutes). Add 1 c. chopped ham during the last 1-2 minutes of cooking.  In a 2 quart baking dish mix together squash, onions and ham, with milk and crackers and salt and pepper to taste. Cover with cheddar cheese on top.  It can be made ahead of time and baked before serving.  Bake in a 350º oven for 20 - 30 minutes.
