Simple Sponge Cake
 
4 eggs
1½ cups sugar
1½ cups flour
1½ teaspoons baking powder
½ teaspoon salt
1½ teaspoons vanilla
¼ teaspoon almond extract
¾ cup boiling water

In a mixing bowl, beat eggs until frothy. Add sugar and beat at high speed until light and lemony colored. Add flour, baking powder, salt, vanilla and almond extract. Mix until well blended. Stir in boiling water. Pour into a greased 11x7 inch (usually glass) baking pan. Bake for about 35 minutes at 350° F. 

This cake is good frosted with your favorite frosting or served with fruit or pudding on top of it.
