Spinach Salad
 

1 lb. fresh spinach, washed and torn into bite size pieces  2 c sliced mushrooms  8 slices bacon, crisply cooked, and crumbled  1 red onion, thinly sliced 4 hard-boiled eggs, sliced 1 tomato, cut in wedges, for garnish  Place spinach in salad bowl; top with mushrooms, onion, eggs, bacon and tomato wedges. Serve with your favorite honey mustard dressing.
