Spinach Loaf
| 2 cups cooked spinach
1 cup milk 2 tablespoons butter 3 tablespoons flour 2 tablespoons chopped onion ¾ teaspoon salt ½ teaspoon Worcestershire sauce 3 eggs, separated Sauté minced onion in butter. Add
flour, stir well and add milk to make thick white sauce. Add drained spinach,
salt, Worcestershire sauce and beaten egg yolks. Fold in beaten egg whites
and turn into shallow greased baking dish set in pan of hot water. Bake
in moderate oven (350° F.), for 45 minutes to an hour, or until inserted
knife comes out clean.
