Spiced Cider
Serve it mulled. Unpasteurized apple cider
is another holiday food that may contain harmful bacteria. If serving cider
to elderly or young family members and friends or those with weakened immune
systems, buy pasteurized apple cider. If you want to buy unpasteurized
cider or are unsure if the cider is pasteurized, mull the cider by heating
it to 160 F or boiling it if you don't have a thermometer. Serve it warm
or cold.
| 2 quarts apple cider
¼ cup packed brown sugar ½ teaspoon whole allspice 1 teaspoon whole cloves 1 cinnamon stick ¼ teaspoon salt 1 pinch ground nutmeg 1 orange, quartered with peel Place all ingredients in a large pan and bring to a boil for 5 minutes. Let sit in a warm place for 1 hour. Reheat to just below boiling before serving. |
