Soda Biscuits
 
 
2 cups flour
½ teaspoon soda
2 teaspoons baking powder 
2 teaspoons butter
½ teaspoon salt 
¾ cup sour cream or milk enough to make a soft dough

Mix and sift dry ingredients. Add shortening and rub in very lightly. Add liquid to make soft dough, turn out on floured board and roll or pat out to ½ inch thickness. Cut with a biscuit cutter dipped in flour, place in tin and bake in a hot oven (450° F.) ten or fifteen minutes

VARIATIONS: To make cheese biscuits, cut 1 to 2 tablespoons of grated cheese into the flour with the butter or sprinkle cheese on top before baking.

To make tea-time biscuits, roll biscuit dough thin and cover with a filling of brown sugar, jam or melted butter, cinnamon and sugar; roll dough in long roll and slice crosswise to make pinwheels.

To make shortcake, double the amount of shortening and add 1 tablespoon sugar to the dry ingredients. Before baking, brush melted butter over top of biscuits.
