Yolk Dressing
| 3 egg yolks, beaten
1 tablespoon sugar ¼ teaspoon salt dash of red pepper (if desired) ½ teaspoon mustard 1 teaspoon butter 1½ tablespoons vinegar Mix dry ingredients. Add beaten egg yolks.
Beat again in double boiler. Add butter and melt. Add egg mixture to which
has been added 1½ tablespoons of vinegar. Cook until mixture thickens.
