Scalloped
Squash And Bacon
| 4 cups sliced raw squash
2 tablespoons flour 1 teaspoon salt Dash of pepper 2 cups milk 6 strips bacon Peel the squash (if using a thick-skinned
variety) and cut in slices about one-eighth inch thick. Arrange half of
it in a greased baking dish and add flour, salt and pepper. Add the remainder
of the squash, cover with hot milk and bake in a moderate oven, 325°,
for 45 minutes. Remove from oven and top with strips of bacon which have
been slightly cooked to remove some of the fat. Return to oven for 15 minutes.
