| 5 cups sugar
2 cups water food coloring aluminum tins (disposable) string or thread wooden skewers candy thermometer (must go to at least 325°f) wooden spoon Buy some disposable aluminum tins (the loaf shape seems to work the best). Poke holes through the rim of the tins using the skewers, and leave the skewers in place. Tie as many pieces of string across the wooden skewers as possible without any two strings touching. In a medium saucepan bring the water to a gentle boil. Add the sugar and stir with a wooden spoon. Continue to boil until all the sugar has completely dissolved. Add one or two drips of food coloring if you like. Continue to boil until the temperature reaches above 260°F then remove from the heat. Let the solution cool for about 5 minutes then pour into the prepared tins. Cover loosely with aluminum foil or waxed paper (just to keep dust off; do not use clear plastic wrap). Punch holes in the cover to allow evaporated water to escape. Place in a warm, airy place, like a window sill. Leave the candy for about a week to allow all the crystals to form. Different Colors: Add one or two drops of food coloring to each tin after pouring it in order to make different colors Sticks: Use wooden coffee stirs or popsicle sticks instead of strings. Just lean them against the skewers and have them poke through the foil. |
