Rice
and Cheese Patties
| 1 cup uncooked rice
2 1/3cups milk ½ cup green pepper, chopped 1½ teaspoons salt ¼ teaspoon pepper 2 cups grated American or cheddar cheese Flour 2 8-ounce cans tomato sauce Put rice, water, green pepper, salt and
pepper in a 2-quart saucepan and bring to a vigorous boil. Turn heat as
low as possible. Cover saucepan with lid and leave over this low heat for
14 minutes. Turn off heat, remove lid and stir in cheese. After cheese
has melted, chill the rice and cheese mixture. Shape mixture into patties,
using ½ cup for each patty. Dip in flour and fry in hot fat.
