Pepper Spread
| 2 small garlic cloves, peeled
1/2 cup parsley 1 - 12oz. jar roasted red peppers 1/2 cup Parmesan cheese, grated 16 oz. cream cheese, cubed Drain peppers in a colander and blot dry
with paper towels. Using a food processor, chop garlic and parsley. Add
peppers and Parmesan; puree. Add cream cheese; mix until blended. Put in
a serving bowl and sprinkle with additional chopped parsley.
