Pumpkin Pie
 
 
2 cups pumpkin
2 cups scalded milk
2 eggs
1 cup sugar
2 teaspoon cinnamon
1 teaspoon ginger 
½ teaspoon salt
Unbaked pastry shell

Combine dry ingredients, and well beaten eggs. Add pumpkin and mix together. Scald milk and add to other ingredients. Pour into pastry shell and bake in a hot oven (450° F.) for ten minutes, then reduce the heat to 325° F., and bake until crust is brown and center of pie puffed up evenly. Makes two pies.
