Potato-Oatmeal
Soup
| 4 cups beef broth
2 cups diced potatoes ½ cup sliced onions 1 cup sliced carrots ½ cup shopped celery ½ rolled oats 1 cup cooked tomatoes salt and pepper Combine broth, potatoes, onions, carrots
and celery in a large pot. Bring to the boiling point and gradually stir
in the rolled oats. Simmer 20 minutes or until vegetables are tender. Add
tomatoes. Season, reheat and serve hot.
