Chop Dinner
| 6 pork chops, ½ inch thick
1 onion, sliced 1 – 6 ounce can frozen orange juice ¼ cup brown sugar ½ teaspoon allspice 3 tablespoons lemon juice ¾ cup water 1 – 23 ounce can sweet potatoes, drained 6 orange slices 1 tablespoon vegetable oil Heat oil in large skillet over medium-high
heat. Brown chops in hot oil. Top each chop with a slice of onion.
Combine the orange juice, brown sugar, allspice, lemon juice and water
in a small bowl. Pour mixture over chops, cover skillet and simmer chops
for 25 minutes. Arrange potatoes over and around chops. Place orange slices
on chops. Cover and cook about 20 minutes longer, or until potatoes are
heated through.
