Peanut
Butter Refrigerator Cookies
| ½ cup peanut butter
½ cup shortening 2 cups brown sugar 1 teaspoon vanilla 2 eggs 2¼ cups sifted flour 2 teaspoons soda 1 teaspoon salt 1 cup ground raisins 2 cups rolled oats 2 cup chopped nuts Cream peanut butter and shortening until
well blended. Add sugar vanilla and continue creaming until fluffy. Add
eggs and beat well. Sift together flour, soda and salt. Add raisins, dry
ingredients, rolled oats, nuts to peanut butter mixture, blending well.
Shape into rolls, wrapping each roll in waxed paper. Chill thoroughly.
Slice into 1/8-inch slices. Bake on greased cookie sheet in moderate oven
(350° F.) about 15 minutes. Store in loosely covered container to keep
cookies crisp.
