Refrigerator Cookies
| 1 cup shortening
1 cup white sugar 1 cup brown sugar 1 teaspoon vanilla 3 eggs, beaten 1 teaspoon soda 4 cups sifted flour ½ teaspoon salt Cream shortening until soft, adding sugar gradually and creaming until smooth. Add beaten eggs and vanilla. Stir in flour which has been sifted with soda and salt and mix well. Divide dough into halves in order to make 2 rolls. Roll each half to ¼ inch thickness. Spread with filling, sprinkle with nuts and roll up like jelly roll. Place in waxed paper. Chill overnight. Slice roll into cookies ¼ inch thick and bake in moderate oven (375° F.) 10 to 12. minutes. FILLING: 1 pound chopped dates, 2/3 cup
orange juice, ½ cup sugar, 1 cup finely-chopped walnuts. Combine
dates, juice and sugar. Spread over rolled dough as directed above and
sprinkle with chopped nuts. Chill overnight before baking.
