Pineapple
Stuffed Ham Slice
| 2 tablespoons shortening
3 tablespoons chopped onion 1 quart soft bread cubes ¼ teaspoon salt Dash pepper 1 No. 2 can crushed pineapple, drained 2 center slices ham, 3/4 inch thick ½ cup brown sugar ½ cup dry bread crumbs 2 tablespoons melted butter or margarine ¼ cup water 1 tablespoon dry mustard 1 tablespoon vinegar Melt shortening in a skillet, add onions and sauté until tender. Combine with soft bread cubes, salt, pepper and pineapple. Place 1 slice ham in a shallow roasting pan. Spread pineapple stuffing over ham slice; cover with second ham slice. Combine brown sugar, dry bread crumbs, butter, water, mustard and vinegar. Spread this mixture over top ham slice. Bake in a moderate oven (350° F.) for one hour. Baste occasionally with pineapple juice drained from can of crushed pineapple. |
