Pimiento
Dressing
| 4 tablespoons flour
½ teaspoon paprika 4 egg yolks, well beaten or 2 eggs ½ cup vinegar 2 teaspoons dry mustard 2 teaspoons salt 2 teaspoons sugar 1½ cups milk 1chopped pimiento 1 tablespoon chopped dill pickle 1 finely chopped hard-boiled egg Mix dry ingredients in top of double boiler. Add eggs and blend well. Add milk, then gradually add vinegar, mixing well. Place over hot water and cook until thickened, stirring constantly. Remove from fire and cool. Mix in pimiento, pickle, and hard-boiled egg and chill. |
