Pecan

| 3 claps sifted flour
1 c. sugar 4 tsp. baking powder 1 tsp. salt ¾ c. shortening 1½ c. pecans, chopped 1 egg, beaten 1½ c. milk ¼ tsp. cinnamon ¼ tsp. nutmeg 1 tsp. vanilla Sift flour with sugar, baking powder and
salt. Cut in shortening. Stir in 1¼ c. pecans. Add egg, milk and
vanilla. Mix until blended. Place in a greased and floured 9 x5 -inch loaf
pan. Sprinkle remaining ¼ c. pecans over top. Bake for 60-70 minutes
in a 350º oven. Makes 1 loaf.
