Pecan Corn Bread Stuffing
 
5 cups corn bread crumbs
1¼ cup onion, finely chopped
½ cup plus 2 tablespoons pecans, chopped
1¼ cup celery, chopped
2½ tablespoon dried parsley flakes
1¼ teaspoon dried thyme
5/8 cup chicken broth

Mix all the ingredients together in a bowl. Stuff into poultry or transfer to a lightly oiled casserole. Bake in a 350° F oven for 20 minutes if not used as a stuffing. Use as stuffing for 12-15 pound turkey. Recipe can be cut down to stuff a chicken.
