Peach
Cobbler
| 2 cups peaches, sliced (fresh or canned)
1½ cups flour 2 teaspoons baking powder ½ teaspoon salt 1 cup sugar ¼ cup shortening 1 egg 1/3 cup milk 1 tablespoon tapioca 1 tablespoon lemon juice 2 tablespoon butter, melted In a large mixing bowl, sift together flour,
baking powder, salt and sugar. Cut in the shortening using a fork or pastry
blender. Beat egg and milk together and add to the dry ingredients. Stir
until moistened. Pour peaches into a buttered 9x9 inch baking pan. Sprinkle
with tapioca, then lemon juice and melted butter. Drop batter by spoonfuls
into 6 mounds on top of peaches. Bake for 30 minutes at 375° F. Serve
warm with whipped cream or ice cream.
