Wet Rub
| 1 T zest grated from 1 large orange
2 large garlic cloves, minced, (about 1 tablespoon) 1 T chopped fresh, sage leaves 1 T extra-virgin olive oil 1 T orange marmalade ½ t ground black pepper ¼ t salt Mix all ingredients together in small bowl.
