Orange
Dream Pie
| Crust:
1/2 c. butter, softened 3 T sugar |
1 1/3 c. flour 1/4 tsp. salt |
| Filling:
1/2 c. undiluted orange juice 1 envelope unflavored gelatin 3 eggs 1 c. sugar |
1/4 tsp. cream of tartar
1 tsp. vanilla 1 - 8 oz. package cream cheese 1 c. whipping cream |
| Cream softened butter and sugar. Add flour
and salt; mix till dough forms. Place 1/3 mixture in a skillet for topping.
Press the remaining mixture over bottom and sides of an
8 1/2" pie plate. Bake for 10-12 minuts at 375o. While the shell bakes, brown the topping mixture over medium heat. Combine 1/4 cup orange juice and gelatin in the top of a double boiler. Add egg whites, 1/2 c. sugar and cream of tartar. Cook over boiling water while beating till stiff. Set aside. Combine 1/4 c. juice, egg yolks, 1/2 c. sugar, vanilla and salt. Beat until light. Cook, stirring constantly, until thick and smooth. Remove from heat. Add cream cheese; beat until smooth. fold in gelatin mixture. Chill until thick, about 30 minutes. Beat whipping cream until thick; fold in gelatin mixture. Spoon into baked shell; sprinkle with browned crumbs. Chill at least 2 hours before serving. |
