Orange
and Nut Pie
| 2 cups milk
3 tablespoons cornstarch ½ to 2/3 cup sugar ¼ teaspoon salt 2 eggs, separated grated rind of 1 orange juice of 1 orange ½ cup chopped nut meats (walnuts or pecans) 4 tablespoons sugar Baked crust Scald milk in double boiler. Mix sugar, cornstarch and salt together. Add hot milk. Stir until thickened . Cover and cook for 15 minutes. Add some of this mixture to the well-beaten egg yolks. Return to double boiler and cook a few minutes. Remove from heat and add orange nuts. Pour this mixture into baked crust and
let stand a few minutes. Make a meringue by beating egg whites until frothy.
Continue beating, and add 4 tablespoons sugar one at a time, until stiff
peaks form. Spread over top of filling all the way to the edge of the crust.
Bake in a 325° F. oven for 15 to 20 minutes, or until lightly browned.
Watch carefully to avoid burning.
