Old
Fashioned Baked Beans
| 4 cups beans (about 2 pounds)
1 onion 3 teaspoons salt ¼ cup molasses 1 teaspoon dry mustard ½ pound salt pork (available in most stores near the bacon) ½ cup catsup Wash the beans and soak them overnight.
Add the salt and more cold water to cover them, then bring to a boil. Drain
the beans, saving the liquid. Slice the onion and place with most of the
pork in a casserole. Add the beans and remainder of the pork, then cover
with a mixture of other ingredients and 2 cups of the bean water. Bake
in a slow oven (275° F) from 6 to 7 hours.
