Fruit-Oatmeal
Power Bars
| 3 cups quick-cooking oats
½ cup finely chopped dried pears ½ cup finely chopped dried cranberries ¾ cup butter or margarine 1 cup packed brown sugar ¾ t salt ½ t grated lemon rind 1½ T corn syrup 1½ t vanilla Combine oats and dried fruit in large bowl and set aside. In large heavy saucepan, melt butter over low heat. Stir in sugar, salt, lemon rind, corn syrup and vanilla; bring to a boil over medium heat, stirring frequently. Remove from heat and stir in oat mixture. Turn into 13x9-inch baking pan; press mixture to form an even layer. Bake at 350° F for 20 minutes. Cut
into bars while still warm. Makes about 21 bars.
