| Canned pears
Cottage or cream cheese Red jelly Mayonnaise dressing Allow two pear halves for each serving.
Dissolve a few drops of red vegetable coloring or cranberry juice in the
pear juice, then place the pear halves in it until delicately tinted. Drain.
Fill the center of each half with red jelly, and surround with seasoned
cottage cheese which has been sieved until smooth, Place the two halves
together, then slice off the large end of the pear so it will stand upright
like a bell. Fasten with toothpicks if necessary until ready to serve.
Dip edges of lettuce leaf in paprika to make them red, then place bell
on lettuce and surround with mayonnaise.
