| 8 cups sifted all-purpose flour
3 tablespoons baking powder 2 teaspoons salt ½ cup sugar 1 cup shortening Sift dry ingredients together. Cut in fat until mixture is like coarse meal. Store in covered container in refrigerator. FOR PLAIN MUFFINS: combine ¾ cup milk and 1 beaten egg. Pour into a well in 2 cups of the mix. Stir only until all flour is moistened. Fill greased muffin tins ½ to 2/3 full and bake at 425° F., for about 15 to 20 minutes. FOR ORANGE MUFFINS: Add ¼ cup sugar and 2 tablespoons grated orange rind to ¼ cup orange juice plus ½ cup milk. Substitute this liquid for the milk in plain muffins. FOR SPICE MUFFINS: Add 1 teaspoon cinnamon, ½ teaspoon allspice, ½ teaspoon cloves, 1 teaspoon nutmeg, and 2 tablespoons sugar to dry ingredients. Then follow plain muffin recipe. |
