Mississippi Baked Chicken
 
 
2½ to 3½ pounds frying chicken
1/3 cup margarine or butter
1/3 cup flour
¼ teaspoon dry mustard
2 teaspoons Worcestershire sauce
½ teaspoon salt
Dash of cayenne pepper

If chickens are small, cut into halves; if large, cut into pieces. Mix remaining ingredients and spread over chicken. Place in well-greased pan or casserole. Bake, covered, in moderate oven (350° F.) 1 to 1½ hours until tender and well cooked through. Remove chicken to serving platter and make gravy of the drippings, if desired.
