Molasses
Fruit Bars
| 1 cup brown sugar
½ cup sorghum molasses 1 cup melted shortening 2 eggs well beaten 1 teaspoon vanilla 1 teaspoon soda ½ cup hot water ¾ teaspoon ginger 1 teaspoon salt About 4 cups flour Mix the sugar, molasses, melted shortening and well-beaten eggs. Mix the soda with the hot water and stir quickly into the molasses. Add vanilla, then the ginger and salt sifted with part of the flour. Use sufficient flour to make a soft dough. Chill for several hours and roll out. Cut in long strips about six inches wide. Spread fruit filling on half the dough the long way and fold over the other half over. Pinch the edges together. Bake in long strips in moderate oven. FRUIT FILLING: Cook 1 cup raisins or prunes
in a small, amount of water. Cut fruit in small pieces, add ¼ cup
of the juice, 3 tablespoons of syrup and 2 tablespoons of flour, cook until
the filling is thick enough to spread.
