Surprise Pie
| 1 tablespoon gelatin
3 tablespoons cold water 3 egg yolks ¼ teaspoon salt ½ cup milk 2/3 cup strong coffee 2/3 cup sugar 3 beaten egg whites ½ cup nuts, chopped 1 teaspoon vanilla extract ½ teaspoon almond extract Baked pastry shell Soak gelatin in cold water until softened.
In the top part of a double boiler, mix egg yolks, salt, milk, coffee and
sugar. Cook over hot water until creamy. Remove from fire and stir in softened
gelatin. Chill until thick, but not firm. Fold in beaten egg whites, nuts
and flavoring. Pour into baked pie shell and chill. Serve with. whipped
cream.
