Frozen
Chocolate Mint Jubilee
| 2 1/2 c. vanilla wafer crumbs
1/4 c. melted butter 1/4 tsp. cinnamon 1/2 c. butter 2 c. powdered sugar |
3 squares melted, semi-sweet
chocolate
1 tsp. vanilla 3 eggs, separated 1/2 gallon vanilla ice cream 1 small bag peppermint hard candy |
| Mix wafer crumbs, melted butter and cinnamon.
Press half of crumbs firmly into
9 x 13-inch pan. Cream remaining butter, gradually add powdered sugar,
beating until light and fluffy. Add chocolate, vanilla and beaten egg yolks
until well blended. Set aside.
Beat egg whites until stiff and crush 1/2 bag of peppermint candies. Blend together egg whites and crushed candy, and spread on top of wafer crumbs. Chill in freezer until firm. Do not cover. Spread chocolate over egg while layer. Slice softened ice cream and spread over chocolate layer, sprinkling peppermint candy over ice cream. Alternate ice cream adn candy. Cover with remaining crumbs. Freeze. 12 servings. |
