Mimosa Eggs
 
 
6 hard cooked eggs
4 cups hot cooked spinach
3 tablespoons butter or margarine
2 tablespoons flour 
2cups hot milk
½ cup cheddar cheese, shredded
Salt and pepper

Melt butter in top of double boiler over hot water. Stir in flour. Add hot milk gradually, stirring constantly. When thickened, add cheese, stirring until melted. Season with salt and pepper to taste. Cover and keep sauce hot.

Arrange drained spinach in greased or individual baking dishes. Pour sauce over spinach. (For individual servings, pour sauce in center lease a rim of spinach showing around the edge.) Press yolks through sieve and sprinkle a mound of yellow the sauce. Place under broiler for 2 or 3 minutes, at least 3 inches from heat. Serve immediately.
