Microwave
Peanut Brittle
| 1 cup sugar
½ cup white corn syrup 1 cup dry roasted peanuts 1 t butter 1 t vanilla extract 1 t baking soda Mix sugar and corn syrup in a 1½
quart casserole dish. Microwave on high for 4 minutes. Stir in peanuts,
microwave on high for 3 to 5 minutes, or until light brown. Add butter
and vanilla, to syrup and peanut mixture. Mix well, microwave on high for
1 to 2 minutes. Use a pot holder, the casserole will be very hot. Add baking
soda, and stir until foamy. Quickly pour mixture onto a lightly greased
cookie sheet. Let cool at room temperature for 30 minutes to one hour.
