Fat Banana Bread
| 1 t. baking soda
½ t. salt ¼ t. baking powder 2/3 cup sugar ¼ cup reduced fat margarine 1 egg 2 egg whites 1 cup banana, mashed ¼ cup water 1 2/3 cups all-purpose flour Heat oven to 350ºF. Spray loaf pan,
8½x4½x2½ or 9x5x3 inches, with nonstick cooking spray.
Beat sugar and margarine in medium bowl on medium speed, scraping bowl
constantly until light and fluffy, about 30 seconds. Beat in egg, egg whites,
bananas and water on low speed until well blended, about 30 seconds. Stir
in remaining ingredients just until moistened. Pour into loaf pan. Bake
until wooden pick inserted in center comes out clean, 8-inch loaf 60 minutes,
9-inch loaf 45 to 50 minutes; cool 5 minutes. Loosen sides of loaf from
pan; remove from pan. Cool completely before slicing.
